Clement et Florian Berthier make this Sancerre Blanc in the Loire, from Sauvignon Blanc grown on the appellation's classic mix of limestone and flint soils. It is a pure, single-grape white that speaks clearly of its place, with the bright acidity and mineral edge Sancerre is built on.

Expect citrus zest, gooseberry and a flinty, chalky finish that lengthens with air. Serve at 10-12°C alongside oysters, langoustines or a simple goat's cheese, and it will also cut through spice or grilled pork with ease at the aft table.
